Apple Hazelnut Cake
Fall season have started and with it came apples!!
We've all heard about the apple crisis we are currently facing in Lebanon especially for the apple farmers' families..
Personally I don't see it as a huge threat cause each one of us can easily help out!! How? By cooking and baking with apples!!
So, for my part, I decided to share with you my Apple & Hazelnut Cake.
This cake is one of those thing's you can whip up really quickly and with ingredients you might already have in your pantry. Sweetened with nuts and apples it's completely refined-sugar-free, yet resulting in a rich moistness. And don't forget about the lovely baking aroma that will keep lingering in your house all day long!

Ingredients

- 1 1/5 cups self-raising flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- dash of salt
- 1/2 cup smoothly chopped hazelnut
- 1/2 cup dark brown sugar
- 1 teaspoon ground cinnamon
- 2 eggs room temperature
- 1 teaspoon vanilla
- 1 cup yogurt
- 1/2 cup vegetable Oil
- 3 small apples, unpeeled, cored, cut into equal thin slice
- 1 tablespoon dry-roasted hazelnuts, roughly chopped
- Extra 1 teaspoon dark brown sugar
Directions
- Preheat the oven to 180°C. Lightly grease a 10*20 cm baking pan
- Mix the first dry ingredients and set aside: flour, baking powder, baking soda, and salt
- Peel and cut the apples into equal size pieces.
- In a food processor mix all the liquid ingredients on a high speed for 2 minutes
- Gradually add in the dry ingredients and mix for another 1 minute
- Line up all the apples
- Sprinkle with (hazelnut - brown sugar and cinnamon)
- Bake for 30 minutes than sprinkle with more chopped hazelnut and cinnamon and bake for another 10 minutes until the nuts are golden brown and a skewer comes out clean.
