Zucchini Pie

It really amazes me why I haven't thought to give this dish a try ages ago!! I know it's not a NEW idea...Nevertheless I loved preparing, baking, and eating this one :)

This pie is so delicious that I’m happy to enjoy it as my main course for a light summer lunch or dinner...

Ingredients:
  • 1 Cup of Zucchini filling
  • 1/2 cup of shredded carrots
  • 1/2 onion chopped
  • 3 beaten eggs
  • 1/2 cup of vegetable oil
  • 2-3 Tablespoon Flour
  • 1 teaspoon baking powder
  • salt and pepper 
  • Parsley or any other dried herbs (as per taste)

Directions:
  • In a medium mixing bowl, Mix all ingredients together: 
  • Preheat oven 180 degrees
  • Grease a 10x6-inch pan or a 12-inch pie plate.
  • Bake for 30 minutes, or until lightly brown.

Serve with a light Mediterranean salad or yogurt on the side!
