Zucchini Pie
It really amazes me why I haven't thought to give this dish a try ages ago!! I know it's not a NEW idea...Nevertheless I loved preparing, baking, and eating this one :)
This pie is so delicious that I’m happy to enjoy it as my main course for a light summer lunch or dinner...

Ingredients:
- 1 Cup of Zucchini filling
- 1/2 cup of shredded carrots
- 1/2 onion chopped
- 3 beaten eggs
- 1/2 cup of vegetable oil
- 2-3 Tablespoon Flour
- 1 teaspoon baking powder
- salt and pepper
- Parsley or any other dried herbs (as per taste)
Directions:
- In a medium mixing bowl, Mix all ingredients together:
- Preheat oven 180 degrees
- Grease a 10x6-inch pan or a 12-inch pie plate.
- Bake for 30 minutes, or until lightly brown.
Serve with a light Mediterranean salad or yogurt on the side!
